POP Nutrition: Decadent French Toast With Berry Medley

Happy Saturday guys,

I recorded first workout yesterday and now working on figuring out how to work with raw video files so I can upload them online. I have to work today and tomorrow is my last required Yoga training after which all I need to do it send over all my certificate along with an essay so i can get my 200  RYT Yoga alliance certificate. Sweet.

You know, I was wondering if you face similar dilemma – peer pressure when it comes down to being healthy.  For most part I am over it, it took me a while to even recognize what was the issue. It will happen very subtle but then somehow I will go from healthy nurturing to binging and overeating. It would be when I will be mostly out with friends or coworkers and I will fall for the old ” I workout and I can eat all I want” or “Live a little won’t you”, or ” You live once”, or ” You will get old and fat anyway”. Which will result into me trying prove that I can eat all I want and still have great health, productive workouts, and energy to burn. But I will always end up loosing that battle because it is just plain not true. I can not abuse my body by eating greasy foods and then expect to turn around and have a great workout or feel light on my feet with energy to spare. It did time to connect the dots but I am glad that I came so far. I do occasionally get a sting when on Friday night I pass by people enjoying themselves in a restaurant (I cook and eat at home). But I take myself mentally back to my week and think how grateful I am to have the awareness of healthy living and at the end of the day I am still in a company of wonderful, caring and kind people – my son, mom, dad, and my boyfriend. So then I just relax and continue enjoying my strolls and walks around the downtown Bethesda. Yes the culture dictates a lot of things – you are boring if you do not drink, or you only live once – but it is comforting to know that I too do not have to fall its prey and can happily continue my journey.

That said, I have enjoyed my scrumptious breakfast pizza this week and today I had a taste for something else then eggs or protein packed pancakes. So here it is a Decadent French Toast With Berry Medley. It came out perfect, not too soggy, not to tough, the fruit was so sweet and scrumptious. Just perfect.

Ingredients:

  • 2 slices of cinnamon raisin Ezekiel bread
  • 1 tsp pumpkin spice
  • 1 tsp all spice
  • 1 egg
  • 2 tbsp unsweetened vanilla soy milk (or other milk of your choice)
  • 1 tbsp sugar free french vanilla coffee syrup
  • canola oil spray
  • 1 tbsp raspberries
  • 1 tbsp blackberries
  • 1 tbsp blueberries

Cooking directions:

  1. In a bowl combine all liquid and dry ingredients beside berries and oil spray. Place bread slices and let them soak up the batter then flip to coat the other side.
  2. Heat up a heavy bottom pan and spray cooking spray.
  3. Place one french toast at time. Cook For 2-3 min then flip. 
  4. Enjoy.
