Here is a new recipe for the Exotic Felafel With Avocado Salad And Tahini Yogurt Sauce:

Ingredients | Felafel:

  • 2 cups of dried chick peas
  • 1 med red onion
  • 2 tbsp minced garlic
  • a bunch of parsley
  • several leaves of basil
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1/2 tsp baking powder
  • 1 tbsp veg broth or water
  • 1/4 cup of veg broth

Ingredients | Avocado Salsa:

  • 2 ripe avocados
  • 2 med tomatoes
  • 2 small Persian cucumber
  • bunch of chopped parsley
  • 2 tsp ground chilli
  • 1 tbsp red pepper flakes
  • 1/4 cup lemon juice
  • 1 tbsp balsamic vinegar
  • 1 tbsp avocado or olive oil

Ingredients | Yogurt Dressing:

  • 1 cup sesame seeds
  • 0.5 cup olive oil
  • 2 small Persian cucumber
  • bunch of chopped parsley
  • 1 cup sesame seeds
  • 4 tbsp olive oil
  • 3/4 cup lemon juice
  • 2 tbsp Greek yogurt
  • 2 cloves garlic
  • bunch of parsley
  • 1 tsp cumin
  • 1 tsp smoked paprika

Cooking Steps:

  1. To prepare the chickpeas, soak them overnight with 2 cups of water.
  2. Next day drain and ground in the food processor. Add onion, garlic, parsley, basil, coriander, cumin,and veg broth.
  3. Ground into fine paste. Leave cover for 30 min so that the ingredients can bind.
  4. Meanwhile, chop up and mix all the avocado salad ingredients.
  5. Heat up the oven to 350 F.
  6. After 30 min, make golf size balls from the felafel mixture.
  7. Line the cookie sheet with parchment paper and place the felafel balls. Add 1/4 cup of veg broth so the felafel will not dry up.
  8. Bake for 30 min,, flip them over and bake for another 10 min or until golden brown on both sides.
  9. To make the dressing.
    • Preheat oven to 350 and toast the sesame seeds for 5-10 minutes, mixing them frequently with a spatula so they do not burn. Let them cool down.
    • Place the sesame seeds and add oil into food processor and blend for 2 minutes until you get thick but still liquid consistency. Add more oil if needed.
    • Add the rest of the ingredients and blend until uniform consistency.
  10. Serve with salsa and pita bread, and creamy yogurt dressing.
