POP Nutrition | Chilli Heaven

Hi guys,

It is getting nippier so I am in hibernation and chilli mode 🙂 and how does not low a bowl of chilli with a spoon of sour cream or 2% Greek style yogurt yum-yum.

Ingredients:

  • 1/2 cup garbanzo beans
  • 1/2 cup white beans
  • 1/2 cup black beans
  • 2 16 oz unsalted canned tomatoes
  • 1 lb 90% lean free-range ground beef
  • 1 lb lean ground turkey
  • 10 basil leaves
  • bunch of parsley
  • 2 tbsp smoked paprika
  • 1 tbsp red pepper flakes
  • 1 tbsp cumin
  • 2 tbsp Garam Marsala
  • 2 tbsp red curry
  • 2 tbsp ground garlic
  • 1 large chopped red onion
  • 2 tbsp avocado oil
  • 1 tsp sage
  • 1/2 thyme
  • 1 tbsp coriander
  • 1 tbsp all spice
  • 1 tbsp ground cinnamon
  • 1/1 cup honey or agave nectar
  • couple of chillies or more 🙂
  • 16 oz coconut water
  • 4 bay leaves

Cooking Steps:

  1. Place beans into a pot and cover with double the water. Leave to soak overnight.
  2. In a heavy bottom pan place oil, chopped onion, and all the spices. Simmer on low for a few so that onion absorbs the flavors.
  3. Add meats, drained and rinsed beans, coconut water, and tomatoes with juices.
  4. Cook for 4 hours or until the beans are soft and tender.

Enjoy with a scoop of sour cream, Greek yogurt or cheese, or all of the above.
