Happy Monday and yes it is steak day, did not your get the memo 🙂 so today’s highlight is Veg & Steak Tortillas with Fresh Chunky Guacamole:Veg & Steak Tortillas with Fresh Spicy Guacamole 7

Veg & Steak Tortillas Ingredients:

  • 1 tbsp. Free2BFit Spice Blend
  • 1 large Vidalia onion
  • 2 peppers | yellow + red
  • 1 lb. filet Mignon or NY steak
  • 1 tbsp. olive oil
  • 8 corn tortillas

Fresh Chunky Guacamole Ingredients:

  • 2 tbsp. cold pressed extra-virgin olive oil
  • 2 plum tomatoes
  • 1 fresh habanero chili pepper
  • 2 hass avocados
  • 1/2 onion
  • Juice of 1/2 lime
  • 1 cup chopped cilantro

Cooking Steps:

  1. To make guacamole, cube avocado, chop onion, tomatoes, chop cilantro and pepper, then add lime juice and love oil.Fresh Spicy Guacamole
  2. In cast iron pan place oil and all the spices. Let the oil absorb the flavor for about 3-5 min.
  3. Add chopped onion and simmer on low heat for 5 min or until the onion start to caramelize.
  4. Add julienne sliced onion and pepper.
  5. Cover and cook on low heat for about 10 min.
