  • 3 5 oz. pork chops
  • 2 summer squash
  • 4 medium beets
  • 2 cups chopped cilantro
  • 1 cup chopped green onion
  • 2 bell peppers
  • 1 large white onion
  • 1 tbsp. olive oil
  • 1 orange

Fragrant 2BFit Spice Rub:

  • 1 tbsp. olive oil
  • 1 tbsp. wine vinegar | I used artisan vinegar with blackberries and black pepper
  • juice and zest of one lemon
  • 1 tsp. turmeric
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. red curry powder
  • 1 tsp. smoked paprika
  • 1 tsp. red chilli pepper flakes
  • 1 tsp. garlic flakes
  • 1 tsp. onion flakes
  • 1 tsp. ground nutmeg
  • 1 tsp. caraway seeds
  • 1 tsp. celery seeds

Cooking Steps:

  1. Preheat the oven to 350 F or 220 C.
  2. To prepare Fragrant 2BFit Spice Rub: mix all dry and wet ingredients and mix well.
  3. Take pork chops and rub Fragrant 2BFit Spice Rubinto the chops. Let it rest for 30 min to absorb the flavor. Fragrant Pork Chops with rub
  4. To prepare summer Vegetable Medley: chop green onions and cilantro. Julienne peppers, onion, beets, and summer squash. Mix well.
  5. Preheat a heavy bottom pan and ad 1 tbsp. olive oil, add pork chops and cook until lightly brown on both sides.Fragrant Pork Chops simmering
  6. When ready take out pork chops and place them on a plate. To the pan where pork chops were cooking add 1/2 cup water and mixed vegetables medley. Cover and simmer on low for 5 min.
