POPN Paleo | Lentils and Turkey Bacon Stew

Hi guys,

I know beans lately have been getting bad rap but even Paleo allows lentils. And did you know that lentils give energy and stabilize blood sugar and are high with folate, magnezium, Vitamin B and fiber. So dig in or should I say “slurp in” and enjoy this weeks POPN Paleo – Lentils and Turkey Bacon Stew.


  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 large carrots, sliced
  • 1 celery stalk, sliced
  • 1 tbsp. dried thyme
  • 4 bay leaves
  • 1 tsp. ground pepper
  • 1 tbsp. garlic granules
  • 1 tbsp. mustard powder
  • 1.5 package 16 oz. low-sodium chicken broth
  • 16 oz. green split peas
  • 8 oz. turkey bacon
  • juice of fresh lemon juice

Cooking Steps:

  1. In a Dutch oven or 5-quart heavy pot with a lid, heat oil over medium. Add onion, carrots, celery, and thyme; season with pepper. Cook until vegetables begin to soften, 5 to 8 minutes.

  2. Add broth, lemon juice, split peas, turkey bacon, cover and bring to a boil, reduce heat to medium-low, and partially cover; simmer until peas are soft, 30 to 45 minutes

  3. Remove and discard bay leave from the soup. Enjoy!
