POPN Paleo | Asian Beef and Vegetable Omelet

Time is of big value to anyone. Sometimes I wake up and the next things I know an hour went by doing errands, paying bills, getting my son ready for school. And although I prep my meals ahead of time (check this post out if you are struggling with making it through the week while nourishing your body with whole foods and clean eats) sometimes life takes over and I need to improvise. And nothing more beats leftovers like using them to make your breakfast much more exciting then just boiled eggs.  Last time I used spaghetti squash to make a delectable Eggs and Spaghetti Power Breakfast and this time we are using Citrus Beef and Zucchini Stir Fry to make one of the best egg dishes ever –  Asian Beef and Vegetable Omelet.

Cooking Steps:

Set a heavy bottom skillet on low heat ghee, then add Citrus Beef and Zucchini Stir Fry, and broccoli. In the meantime whisk eggs, milk and Free2BFit spices blend in a bowl. When uniform, pore over the meat and veggies. Cook covered for 5-7 minutes. Enjoy!
