Sriracha is my go to sauce of choice. I use it a lot and very liberally. That was until I had to change what I eat. Unfortunately, I do not do well with vinegar and gums. So I ventured out just to find out that all crops of red jalapeno peppers were bad. I went to several stores and first could not figure out what is going on until I went to the Asian market (I love going there so many awesome things to try) and the associate told me about the crop situation. So I had to settle for a jabanero pepper. Have to work with what I got. For my first recipe I decided to stick to the recipe and used Paleo Sriracha from Nom Nom Paleo blog but had to make a few changes since I cannot use vinegar. Overall I liked it a lot with one tweak for the next batch. I used 3 tablespoons and it was way way way too much. Outside of that I was very happy.
- 1½ pounds jabanero peppers
- 8 garlic cloves
- juice of 1 lime
- 1 small onion
- 1 tsp. honey
- Peel and chop onion and garlic, remove the stems from peppers. (I kept the seeds for x-tra kick you always have an option to take out the seeds. If you would like to remove seeds make sure to use gloves or you can burn the skins on tips of your fingers. Been there done that. Not pleasant at all.
- Place garlic, onion, peppers and the rest of the ingredients into a high-speed blender. (I use Blendtec or you can also use Vitamix, it is just as good). Pulse on high until uniform consistency and no chunks are left.
- Raw Option: At this point if you want you can eat as is. It will get better as it sits int eh fridge and all the spices are coming together.
- Cooked Option: Place blended raw Sriracha sauce in a medium pan and cook on low heat for 10 minutes. Remove from heat, let it cool. Store in a glass airtight jar in the fridge.
***Tip: Do not use wooden spoon if you use it somewhere else as I did. I made the sauce and then made pasta for my son and he goes it is so spicy I cannot eat it. Well, it was the magic wooden spoon with a kick. I cleaned it a few times and it got much better and now back to normal.
